A new segment on our blog we are starting is #FoodieFriday. This is where we will share recipes from our kitchens and even your recipes that you can email to us! With each recipe we will feature wines that pair well with the recipe. For our first #FoodieFriday recipe we are going to be sharing our winemaker Amanda’s Famous Fajitas recipe. Amanda says this is one of her easiest, go-to recipes. It pairs perfectly with our #SassySaturday Sangria or of course our #MargaritaMonday Wine Cocktail.
Ingredients:
1 lb. of Chicken Breast
2 Bell Peppers (variety of colors)
1 Red Onion
1 Tablespoon of Fajita Seasoning (Penzey’s Spices)
1-2 Tablespoons of Coconut Oil
1 Package of small tortillas
Toppings:
Shredded Pepper Jack or Cheddar Cheese
Avocado Slices
Cilantro
Sour Cream or Plain Greek Yogurt
Directions:
- Cut the chicken breasts into small strips. Put in bowl and marinate with fajita seasoning.
- Cut the onion in half then cut slices.
- Julianne peppers and mix colors together.
- In a large skillet, heat the coconut oil on medium heat.
- Add the chicken to the skillet and let it cook for about 3-4 minutes. Using tongs toss the chicken or turn it over in the skillet.
- Add the sliced onion and peppers. Cook for another 3-4 minutes.
- Toss the chicken and vegetable mixture every 2 minutes until it appears the chicken is fully cooked and the vegetables have darkened but are still slightly crisp. *At this time Amanda will add a heavy dash of Jalapeño Wine if looking for some extra heat* Set aside in a serving bowl when finished.
- Place tortillas in a slightly damp paper towel on a plate and microwave them for 15-30 seconds. Keep warm with another plate on top.
- Layout all the toppings, the tortillas, and the chicken and vegetables on the table or buffet. Assemble your fajitas on your plate.
- Fill wine glass partly with ice and pour Sangria or Margarita in!
